Easy Oatmeal Chocolate Chip Cookies Anytime!

Recipe: (Adapted from AllRecipes)

Ingredients

  • 1 cup butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups quick-cooking oats
  • 1 cup semisweet chocolate chips
Directions
  1. Preheat the oven to 335 degrees F (for chewy) 350 degrees F (for crispy)
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
  3. Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Chocolate Chocolate Chip Cookie Cake
Adapted From “Best Recipe”
 
Ingredients:
2 cups All Purpose flour
1/4 cup cocoa powder
1 tsp kosher salt
1 tsp baking soda
2 sticks butter, room temperature
1 cup light brown sugar
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla
1/2 tsp water
2 cups chocolate chips
Directions:
  1. Preheat Oven to 350 F
  2. Mixed flour, cocoa, salt and baking soda- whisk together till uniform in color.
  3. In a separate bowl, either with a stand mixer or hand mixer, cream butter and sugars till fluffy
  4. Slowly add eggs, then vanilla and water.
  5. Mix in flour mixture until just incorporated
  6. Add chocolate chips
  7. Place all the dough in a baking dish- this can range in size- the more shallow and wide, the more of a traditional cookie it will be vs a smaller but deeper dish will make for a gooey almost molten cake.
  8. Bake for 30-40 minutes. Remember you can always bake it less if making in advance and then finish it off later to enjoy warm!
